Freeze drying is nowadays a standard process used to increase the shelf-life of a whole range of dairy products such as milk, cheese, yogurt and ice cream.

Lyophilization gently freezes the dairy product. After that water is extracted as vapour, it turns into ice and is collected on a condenser below the freezing chamber. Rising the temperature extracts all remaining moisture. The physical structure is intact and the dairy product is preserved for storage or transport. This is the way dairy products, both solids and liquids, are preserved without damaging their basic structure. Quality in dairy products means natural colour, perfect size, great flavours and proper nutrients. Freeze-dried dairy products are exactly like fresh ones, but they don't require refrigeration or preservatives and can be either consumed directly or re-hydrated. They are lighter and smaller so they are easy to transport.
